Recipe of the Week: Pasta E Fagioli

Potlucks always pose a bit of a conundrum. You don’t want to empty your wallet or slave over the stove for hours, but it’s also depressing to have your Tupperware returned ¾ full. Luckily, we’ve found a hearty crowd-pleasing recipe that costs about as much as a Wawa sandwich. Total time: 35 mins, 6 to 8 servings

Ingredients: 1 can diced tomatoes 1 can cannellini beans 1 carton beef, chicken or vegetable broth ¾ box of elbow macaroni 1 tsp. oregano 1 tsp. thyme 1 clove garlic, minced

Directions: Sautée garlic. Add tomatoes (with juice) and broth; let simmer for a half hour. Then add thyme, oregano, beans and macaroni. Remove from heat, cover and let sit until pasta is cooked, about 5 minutes (the starch in the beans cooks the pasta).
