Ingredients:

3-4 eggs

Pepper

1-2 tbsp mayonnaise

1 tbsp mustard

1 tsp Paprika

Plus pinches of any of the following you wish to include: anchovy or sardine paste, chopped ginger, cream cheese, chutney, caviar, smoked salmon, devilled ham, grated Roquefort, chopped chives, basil, tarragon, etc. (don't be afraid to improvise!).

Directions:

1. Hard boil the eggs

2. Peel eggs and slice in half; remove yoke.

3. Mix egg yoke in bowl with mayonnaise, mustard, pepper and whatever else from the optional ingredients.

4. Place mixture in equal amounts in the open-faced half eggs.

5. Sprinkle paprika on top. Enjoy!
